More Easter Recipes...

As a newly married woman, I'm dividing my holidays between my new family and my "old" family. This year I celebrated Easter dinner with Hubby's family. MIL was serving ham and I CANNOT have ham on Easter without pineapple souffle. I couldn't imagine Easter dinner without it, so I made it.

Pineapple Souffle (Super Easy!)

Ingredients:
~½ cup butter, softened
~½ cup white sugar
~ 4 eggs
~1 (20 oz.) can crushed pineapple, drained
~5-6 slices bread, cubed

Directions:
1. Preheat oven to 350° F.
2. Cream butter and sugar.
3. Beat in the eggs. Beat well.
4. Stir in crushed pineapple and bread.
5. Pour in a casserole dish or glass baking dish. Bake at 350° for 1 hour.
6. Serve warm!

Notes: The recipe calls for more sugar (about 1 cup) but it really doesn't need it.

Review: I loved it. I did have to make this twice though. The first time I completely melted the butter and decided to use it anyway. Big mistake! I remade it, just prior to putting in the pineapple so it wasn't that bad. My second version could have used about 5 or 10 more minutes in the oven though (my oven is weird).

Everblossom Cupcakes

I've been trying to work on presentation. I just don't have a knack for it, but I still find myself trying. Right before the Easter holiday a woman at work sent me this recipe for Everblossom cupcakes so I decided to make these for Easter dinner at MIL's house.

Ingredients for decorating:

Batch of baked cupcakes - I used triple chocolate
Vanilla butter cream frosting
Butter knife
White candy melts
Candy Dots - m&m's in Easter colors


Here are my representation...


I will admit I made them from memory. I bought "whipped" icing which did not work very well. The candy dots did not stay very well and there was no way I could have stuck ten candy dots on each cupcake so I cut it down to six. It looks better with ten, but I thought that was too much candy.




Tray of cupcakes ready to go. These did not transport well on Easter. The icing did not hold the candy dots very well but I think with different icing it would have been fine. These were delish!

Happy Easter!!!

Each place setting had a dyed Easter egg with each person's name on it. Edible place cards - so creative!


After dinner, we hid the eggs that were still left on the table for the Easter egg hunt. Unfortunately one didn't make it across the lawn...I honestly have no idea how MIL's egg ended up like this...honestly!


Pictures of Gidget being a good girl during the Easter Egg hunt! It was easier to take her picture than it was to take anyone else's. Gidget had her "big girl" surgery on Friday so Paige stayed home on Easter. We weren't sure Gidget would be up for company, but she certainly seemed like she wouldn't have minded.


Anyone up for a game of fetch?? Anyone????

Six Months Ago Today

I married the love of my life and we went on an amazing honeymoon to Mexico...


Six months later, it's business as usual! I still procrastinate and just got around to approving the final layout for the wedding album. We still need a new roof. Our dog still needs some obedience training. We still live next door to the same annoying people. The only real changes are I'm getting better at cooking (i think) and we might (but probably not) get another dog.

Most of today will be spent cleaning the house and cooking. The only time we clean the house is when we have people over which is not nearly enough. We are having my brother and his family over for dinner tonight. I'm making spaghetti, meatballs, and sausage for dinner plus peach cheesecake for dessert since it's so darn easy to make.

I'm baaaaack!

After a short (or long to some) hiatus, I've returned. Where have I been? I'm glad you asked!! I've been right here this whole time. I finished another quarter at school, and am off until summer (boo!). This past quarter was fairly easy, except for the group project. I don't understand the point of group projects in grad school. If it isn't bad enough that I work full time, and go to school weeknights, that now I need to give up my weekends! The project came together ok at the last minute, but it was fairly aggravating.

Work has been kicking my butt too. Things are finally starting to calm down a bit though...which in this economy is making me nervous. I'd rather be jam packed with work so at least I know I'll have a job.

Now that the warmer weather is here, gardening will be at the top of my priorities along with getting in shape. Hubby has already started planting veggie seeds in a seed starter kit which the kitty cats love. We're cleaning out the flower beds to make room for the spring annuals. The daffodils have bloomed and the tulips are on their way. I planted all of the lovely tulips I was brought for Easter dinner last year and most are coming up in full force.

Those that live in glass houses shouldn't ...

Every Tuesday I leave work a little early to try and beat traffic on my way to night class. I usually get to campus an hour or more before class because traffic is just that bad around the city. I kill time sitting in my car watching the people walking / driving by. Today was no different only I left a little later than usual and had to parallel park on a busy city street with minimal space. I used the pull right in tactic but I was 2 feet away from the curb. Grrrr!!! I tried to straighten out but backing up and moving forward several times did not change the situation. I had to pull back out (in rush hour traffic here) and re-park. It was ridiculous to watch, I'm sure!

Once my car was parked correctly, the people watching commenced. I saw a guy throw back a bag of doritos...not something I personally do in public, a lady walking a really different colored Siberian husky, and some people driving like absolute morons.

The parking authority drove by my car and slowed down, which freaked me out. At that point it was 5pm and time for me to pay the meter anyway. I had my quarters all ready to go but the meter was out of order! It was overloaded with quarters probably due to the recent price increase. I took a picture of the meter # and out of order sign just in case. I'm worried I'll get back to my car tonight and have a ticket! After seeing Parking Wars on A&E this weekend I'd rather not have any run ins with the PPA!

Happy V-Day!

Hubby and I celebrated our 1st married Valentine's day together! We exchanged cards and a bag of green m&m's for him and a tiger stuffie for me. Normally we put alot of money into Valentine's Day but with our recent purchases and the economy it's money better left unspent.

Our recent purchase for Hubby's birthday:
It's awesome! I couldn't see wasting money on another Dell laptop with Windows Vista...so I'm not a PC. I'm a MAC baby!! The iMAC is currently sitting on my desk, with it's fancy printer, while my laptop and printer(s) are homeless. I bought Hubby the wireless keyboard and mouse too. We've been uploading CDs onto it all weekend since Hubby lost all his music when his Gateway crashed after which his iPOD died.

Saturday morning, Hubby helped a friend move and I spent the morning with my mom. We went to the gym and had a good work out, went to the supermarket, and even fit in a quick trip to the fabric store. Hubby and I had dinner with my parents, my brother, brother's gf, and brother's gf's son instead of fighting the crowds of couples trying to have a romantic dinner on an overrated non-holiday. Mom made meatloaf topped with mozzarella cheese, twice baked potatoes, spinach, and green beans. I made an Angel food cake for dessert which we topped with strawberries and whipped cream.
